    I just made this and it was awesome!

    1 Onion
    2ts mustard powder
    2ts curry powder
    1ts cumin
    1ts fennel seeds
    1ts cinnamon
    1ts cardamom
    Black pepper and salt to taste
    1 egg plant
    2 courgette
    1 yellow bell pepper
    1 red bell pepper
    300ml (vegetable) broth
    2tbs red thai curry paste
    200ml cocosmilk
    125ml creme fraiche

    Chop up onion and saute it in fat of choice on low heat untill soft and slightly transparant. While sauting the onions chop up the other vegetables in pretty big pieces. When the onions are done add all the spices, stir and cook for one more minute.

    Now add all the vegetables and cook in their own liquids for ten minutes on medium-low heat.

    After ten minutes add the broth, curry paste, cocosmilk and salt/pepper to taste. Cook for 15 more minutes while stirring.

    After fifteen minutes add the creme fraiche, give it a good stir and cook for three more minutes.
