  • Improve my salad

I'm not really that much of a salad fan. I'm a huge meat fan. But lately I've been trying to up my vegetable intake, it makes me feel much better. I found a base for a salad which I really enjoy and want to make a staple. I'd like to improve it further since it's still rather simple. Especially nutrition wise but taste waste would be appriciated as well. Thnx in advance, here's what I made yesterday:

Caramalized onions, baked bacon bits, sauted mushrooms, arugola, balsamic and basil.

What can I add to this to make it even better? (Note: I don't like bell pepper that much)

You can always add a different mix of veggies, but don't forget that there are some simple ways to pep up the dressing.

Before you add the goodies to the bowl, throw a spoonful of Dijon mustard in. (If you can find tarragon Dijon, it's great for salads!) Then you basically add a splash of vinegar. You can use white wine, red wine, rice wine vinegar, lemon juice, lime juice, or orange juice for different flavors. Then drizzle in some EVOO. For a creamier salad dressing, crack an egg yolk in there. Experiment with fresh herbs like tarragon, chives, basil, etc.

Or you can start with 4-6 anchovies, mash them up with a fork, add some chopped fresh garlic, S&P, and juice from 1/2 a lemon. Add a dash of Worcestershire. Crack an egg yolk in, and drizzle EVOO for a tasty Caesar dressing.

I've also found some really tasty flavored EVOOs (Persian lime infused, blood orange).

I always add leftover salmon, broccoli, cauliflower, asparagus, whatever, right into the salad, too.

        A persian cucumber
        Baby carrots
        A stalk of celery
        5-6 cherry tomatoes
        (sometimes) 1/8 red bell pepper
        Frozen wild blueberries
1 sheet of sushi nori ripped up
        1/2 or 1 avocado
        Balsamic vinegar

Do you like fruit? Pomegranate seeds, berries, dare I add mango? citrus fruit?
From the veg: Cooked and cubed butternut/pumpkin/spaghetti squash, zucchini, spinach, tomatoes, roasted peppers, onion, garlic

You can be as inventive as you want to be.

            Good luck.

I have a post on my food blog dedicated to mastering the BAS.
That said, my favorite salad is 1 lb shrimp, 2 cans tuna, 1 avocado, apple cider vinegar, lemon juice, and EVOO with baby greens. You could also do grilled chicken tenders, bacon, steak, etc. Unleash your imagination

I've read that some time ago. To be honest most of those things don't really do it for me. Also I have no problem getting fats and protein in. This salad is mainly about getting as much veggies as possible in . I can always add protein when I take one with me as a meal replacement to work.

I have to say though, the salad I'm eating right now is one of the best things I ever ate, omg!

I knew it was some dutchy remark when I saw your name, Otzi. I'm a bad dutchy though, don't like boerenkool.

I like to put a few fried eggs and bacon in my salad.. the yolk/bacon grease combo is an awesome "dressing".

Radishes are a must-have in my salads.

Just about any veggie you can get your hands on can be added to a salad, either raw or lightly steamed. Or you can make something like a broccoli or carrot salad and put it on top of mixed greens. Toss a Tablespoon of dried cranberries or dates, and walnuts with blue cheese, and chopped papaya or avocado.

For me though what makes the salad is getting good at pairing the ingredients with the perfect dressing. Experiment with different oils and vinegars. For me, a lightly sweetened (a few drops of liquid stevia) vinegar and oil dressing with poppy seeds goes really well with most everything.

I think the most important thing is fresh and seasonal, and of course local is always nice.
