  • Banana Bread Recipe Needed ASAP!! Any ideas!?

    Hello all! Yes, typical, leaving baking to the last minute but who doesn't love fresh banana bread. I'm looking for the healthiest (yet still yummy) primal banana bread recipe, any ideas or suggestions are greatly appreciated!! THank you!

      Choco had one on his food porn thread:

      He ferments some of the flours over one day, so if you need to make this ASAP, you'll have to skip this step and just combine all the ingredients at once. You could also substitute more rice flour for the buckwheat since there's not really any advantage to fermenting rice flour.

        2 Eggs
        1 tsp baking soda
        1/2 Cup Melted Butter
        2 Cups of Almond Flour
        Pinch of Sea Salt
        2 ripe/over ripe bananas
        3/4 cup crushed walnuts

        Step 1: Pour your 2 cups of Almond Flour in a mixing bowl.
        Add the teaspoon of baking soda
        Add the pinch of sea salt

        Step 2: Grab another mixing bowl
        melt a 1/2 cup of butter and pour it in...
        Grab a small cereal bowl and whisk two eggs, add it to the melted butter...

        Step 3: Mash up your two ripe bananas pretty good then add them to the eggs and butter
        Add crushed walnuts

        Step 4: Stir it up good and mix into the bowl with the almond flour.
        Pour the mixture into your bread pan.
        Place in 350 degree oven and bake for about 30 minutes or more (do the toothpick in brownie test)

          The only problem with this recipe is you'll want to eat the muffins all at once:

            I intend to try to adapt the Cook's Illustrated method for banana bread to a gluten-free version. The key to that method is the use of five (yes, five) frozen or microwaved bananas to extract water-soluble "juice" from the fruits, which is then reduced to a sticky, syrup-like liquid and added back into the batter to reduce the water content thusly yielded.

                i am totally partial to my own banana bread recipe, which is sweetened with honey. i make this a lot, it is a super reliable recipe!
