  • Sweet potato chips (fries)

    Have tried a couple of recipes for these but they never seem to turn out right (crispy outside fluffy inside) not sure how to overcome this without deep frying in sunflower oil (TGI friday does this and they taste amazing)

    What recipes have you tried?

    I always slice 'em thin, to look like french fries, put a little olive oil on them, sprinkle garlic powder, mix together in a bowl. Spread them into a single layer on a cookie sheet. Oven at 425F for 15 minutes.

    Always turn out yummie for me this way. I think if you flip them around mid cook, and maybe leave them in longer, you'll achieve more crispy-ness.
    Stumbled into Primal due to food allergies, and subsequent elimination of non-primal foods.

    Start Gluten-Free/Soy-Free: December 2012; start weight 158lbs, Ladies size 6

    26lbs lost since cutting the crap.

      I toss mine in coconut oil with salt and pepper and roast for about 30-40 mins at 400 depending on thickness/size.
      Started Primal June 2012 at 148.5lbs, and 5' 1", reached goal weight in 5 months.
      Lowest weight 93lbs - too thin. Now stable at around 100lbs much better weight for me at my age.
      Primal, minus eggs, dairy and a myriad of other allergens.

        Not sure on the links but generally it was chop them up throw them in a sandwich bag with some oil and spices shake them about and throw them on a baking tray for 40 mins however I find they never get crispy and usually end up tasting abit greasy. Someone suggested maybe before cooking dropping them on a sheet of kitchen roll to absorb excess oil before cooking so may give that a try.

        I know the restaurant probably deep fried them and I know on other sites people mentioned deep frying using coconut oil, lard & olive oil/coconut oil blends.

          I slice mine with a mandolin, then deep fry in my leftover Bacon fat.

            Orange sweet potatoes are lower in starch than white potatoes, and it is of a different type, and they are higher in water, so they will come out moister inside. White sweet potatoes should cook up dryer.

            If I fry potatoes, I deep fry in refined coconut oil for best results.
