    This was such a hit with our family that I wanted to share it with you.

    How do you guys & gals make your pulled pork? Would love to cook some other interesting dishes with it. Thanks!

    Here's mine: (Really only feeds 2 hungry Primals in our household)

    Ginger Smoked Pulled Pork

    1 pound Smoked Pulled Pork
    1 1/2 tablespoons Ghee
    4 large Shallots sliced
    3 medium Cloves of Garlic chopped
    2 small Serrano chiles chopped & seeds in
    1 small Ginger root minced
    3 medium Bell peppers sliced
    1 cup Coconut Milk
    1 pinch Sea salt to taste
    2 small Vine ripe tomatoes chopped

    Best if prepared in a wok. Combine, ghee, shallots, garlic, and serano chiles, saute for 3 minutes then add tomatoes, bell peppers (best you use 2 green, 1 red bell pepper). Cook until all veggies are tender but not too soft, add in the smoked pulled pork and stir together. Sea salt to taste and add minced ginger and coconut milk, reduce heat to low and simmer for 15 minutes.

    Serve with salad, or sweet potatoes or on a shallow bed of quinoa. We also like it as lettuce wraps.

    Nutty! You just combined my two favorite things!

    My boyfriend is from the south and makes the best pulled pork I've ever had. We have a smoker and he puts on a rub and smokes it low and slow for 6 hours and then finishes in the oven for an hour on high.

    The most important thing is the sauce (or "sass" as he calls it) - which is just a mix of ketchup (homemade), apple cider vinegar and crushed red pepper. Serve with cole slaw, limes and sour cream.

    Mmmm - now I need it!

      Oh Suki, you did it again. LOL Now I want to come over and eat some pork. I have never smoked or pulled it myself, but this just sounds sooooo good. Man! So how does he make his own ketchup?
