  • Need a side dish!!!!

Alright y'all... my family is doing a crawfish boil for Easter at my parents house. now give or take it is relatively primal minus the massive amounts of seasonings and salt used in the boil but thats heresay.

I NEED A SIDE DISH TO BRING!!!!!! Here's what i am working with

    - No bacon b/c I don't have access to ANY quality bacon or pork belly

    - No hard cheese or cream cheese

sour cream is fine, any veggie

You lost me at "no bacon" LOL

I'd second the guacamole deviled eggs though!

Some nice, spicy cauliflower rice would go well with a crawfish boil.

This is my favorite side dish, and everyone gobbles it up:

large diced mushrooms (I like portobello, but any will work)

                      spinach or other green

                      garlic

onions, (I like to slice them into rings and then slice those in half so I have large "strands" of onion lol)

                      red pepper flakes

white wine (you only need about a 1/4 cup or even a little less.)

butter (usually I do this dish with bacon, but in the absence of bacon, butter is delicious!)

                      a lemon

Heat the butter, throw in the onions and let them begin to carmelize, add the diced garlic and once you can smell that lovely garlic smell then add the mushrooms and more butter if needed to get all of the mushrooms nice and coated. Cook mushrooms until done, then crank the heat and throw in some wine and red pepper flakes. Let the wine cook reduce until you can hardly see it any more, then add the spinach and let it wilt but don't overcook, keep it that bright green color. Squeeze fresh lemon juice over the dish, fresh cracked pepper and serve.

So yummy, and very pretty. (if you did have bacon, just cook it first and use the grease in the pan instead of (or with) butter!)

The more I see the less I know for sure.

Stuff the mushrooms with a mix of chopped mushroom stem, onion, spinach, bulk breakfast/italian sausage and egg. Finish with some parmesan or romano.
